I've got a hand injury which prevents me from gripping very hard. (RSI
from typing too much.)
I can still work out my chest and my triceps, because, on a bench press
machine, you don't really have to grip the handles, you just push on
them.
I can't figure out how to work out my upper back or triceps. Pull-ups,
rows, bicep curls, and their machine equivalents all seem to entail
gripping a bar and then pulling it towards you. (That's just the nature
of the exercise.) I tried "weight lifting hooks" (basically, hooks
attached to straps that go around your wrist). They sort of worked for
pull-downs, but it was painful.

Lifting stones? You do not really grip them. To simulate it in a gym,
you lift one end of a barbell and sort of row it to your chest.
Tighten the collars hard or plates will pinch your skin.
Can be done with a sandbag.

Its beyond my comprehension level that a grown man can injure himself from
using a keyboard or a mouse. We got that a lot over here as well.

Yes. And you can press with your palms, hands open. I do that.

Narrow grip benches and dips.
Overheads work a portion of the upper back.

DB rows.
Grip the DB, and then tape your hand around the DB with the other hand.
Takes a minute to put it on and of, but works. You can go all out.
