There is no magic about the range of motion one achieves with a pair of
45's on an Olympic bar - although it is the standard for competition,
there is no reason one cannot lift safely through a greater range of
motion, especially with the kind of weights you're using.
Standard common-sense advice applies: use the best form you can, have
someone knowledgable watch you periodically to be sure you're not doing
something unsafe, and practice, practice, practice to get better,
staying far from failure.
In my opinion, you'd do better to deadlift six sets of four rather than
three sets of eight. The rest periods needn't be long but this will
keep you fresher, and it will also allow you to use a bit more weight.
